Roasted Strawberry Lemonade

Warning! I’m about to go all Sandra Lee on you. It pains me, to even type that. I’m sorry, but this guy isn’t going to squeeze a bazillion lemons and make a simple syrup just to make lemonade that I can pick up at the grocery store. I will, however, roast a pint of strawberries, blitz them in a blender, then add them to good-quality store bought lemonade. It makes the perfect summer sip. It’s my beverage of choice when two of my favorite way-back-when-friends join me for an afternoon in the kitchen on Wednesday.

Roasted Strawberry Lemonade

  • 1 pint strawberries, hulled and cut into 1/2 inch pieces
  • 1/3 cup sugar
  • 3 tablespoons fresh lemon juice
  • Good-quality lemonade of your choice. Go ahead, make your own if you want.

Preheat oven to 350 degrees. Place strawberries in an 8-inch glass baking dish. Add sugar and mix gently. Bake for 8 minutes. Let cool. Puree strawberries and lemon juice in a blender or food processor. Transfer to a jar and chill in refrigerator. When ready to serve, add 1-2 tablespoons of strawberry puree to a glass of lemonade, mix and enjoy.

  7. we’re about to hit 93 degrees today and have one bag of strawberries we picked in May left in the freezer. We know where they’re going. We’re with you on the buying the lemondade. there’s a difference between a pretentious foodie and a person who loves food-one is about form and the other substance. with food, we’ll take the substance any day! Frank Bruni wrote a great piece when he was food critic with the NY Times about roasting a chicken, putting it in a big bowl and sitting down and eating it with your fingers.
