grilled portobello quesadillas

My Everyday Food Challenge continued today.  It was time to cook from issue #4 from July/August 2003. And let me just say thank you, from the bottom of my very happy stomach, for voting for the Grilled Portobello Quesadilla. It’s not something that I would normally cook, and it was an absolutely gorgeous evening to spend a little time at the grill. What made this dish so memorable? Two things. The olive oil and balsamic vinegar glaze on the portobello and the smokey essence of the charcoal grill. We topped them with a couple dollops of sour cream and several spoonfuls of pineapple mango salsa that I found at the local grocery store. It was a simple dish and a perfect introduction to summer grilling.
