On Thursday, I had my one day off of the week. I spent a very good portion of it in the kitchen baking. I made chocolate chip cookies and snicker doodles to take to some neighbors and to work. I also made Ina Garten's buttermilk cheddar biscuits. I have not been able to stop talking about these dang biscuits. It was my first attempt at making biscuits that didn't involve using the end of a spoon to break the seal on the rolled refrigerator variety available at your local market. The results were incredibly tasty and very simple to make. I've always used a pastry cutter to cut the cold butter into the flour. It takes a lot of work. Ina suggested using a stand mixer for the job. It really sped up the process. Also, Ina didn't worry about biscuit cutters. She just had me roll out the dough and cut it into eight equal pieces. What could be simpler? I vow to never subject Greg to store bought biscuits again. He even stated that they would make great gifts. Anybody want homemade biscuits for Christmas?
