wonderful weekend waffles – made by greg

We’ve begun a new tradition in our house, and it’s now two weeks old. For the last couple of Sunday’s Greg has been the waffle master. And this past weekend he found the perfect recipe and made it his own with a little twist. While Greg is on waffle duty, I heat up a new delicious find of ours – Bob Evans Honey Maple Sausage. It is beyond great and compliments the syrupy doused waffles. It’s a lot of fun sharing the kitchen with Greg on a Sunday morning. There’s no rush, just us with our waffles, sausage and piping hot coffee. Pure bliss.

*Added bonus, this recipe makes a lot of batter. More than two hungry fellas could eat in one sitting. Greg cooked up the extra batter, and now we have six more waffles in the freezer, just ready to be dropped in the toaster for breakfast later this week.

Greg’s Wonderful Weekend Waffles (adapted from allrecipes.com)

serves 6


  • 2 eggs
  • 2 cups all-purpose flour
  • 1 3/4 cups milk
  • 1/2 cup canola oil
  • 1 tablespoon white sugar
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon


  1. Preheat waffle iron. Beat eggs in large bowl until fluffy. Mix in flour, milk, canola oil, sugar, baking powder, salt, vanilla and cinnamon just until smooth.
  2. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.

  1. Mmmm. Love waffles. My husband favors Belgian waffles, so that’s what I always make. So if you want to make those, come and see me. Your photos are just gorgeous! They are making me hungry.
