jarlsberg spread – everyday food challenge

As promised in Tuesday’s post, a bonus Everyday Food Challenge recipe from issue #14, Jarlsberg Spread.  Are you familiar this outstanding cheese? Exported from Norway, Jarlsberg cheese is known for its distinctive sweet and nutty taste. To make this delectable spread you’ll need about 2 cups of grated Jarlsberg, a little less than a cup of mayonnaise (I really enjoy the olive oil based mayos on the market right now), a tablespoon each of finely chopped red onion and parsley, salt and pepper to taste. Stir it all together and serve with the very best crackers you can find.
